Ingredients

  • 2 sheets frozen puff pastry (9- or 10-inch), thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, wilted and thoroughly squeezed dry
  • ½ cup crumbled feta cheese
  • ¼ cup finely grated Parmesan cheese
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon dried oregano
  • 1 large egg, beaten (for egg wash)

Steps

  1. Preheat the Oven: Place racks in the upper and lower thirds of your oven and preheat to 400°F (200°C). Lightly grease or line two standard muffin tins with nonstick spray.
  2. Prepare the Filling: In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant. Remove from heat and let cool slightly.
  3. Combine Ingredients: In a large mixing bowl, combine the wilted spinach, crumbled feta, grated Parmesan, sautéed onion and garlic mixture, black pepper, and dried oregano. Stir until well combined.
  4. Prepare the Puff Pastry: Unfold the puff pastry sheets on a lightly floured surface. Using a sharp knife or pizza cutter, cut each sheet into 9 squares (3×3 grid). Gently press each square into the wells of the prepared muffin tins, allowing the corners to overhang.
  5. Fill the Pastry Cups: Spoon the spinach and cheese mixture evenly into each pastry-lined muffin cup, pressing down gently to compact the filling.
  6. Fold and Seal: Bring the four corners of each puff pastry square towards the center, covering the filling. Lightly press the center to seal. Brush the tops with the beaten egg to create a golden finish.
  7. Bake: Place the muffin tins in the preheated oven. Bake for 21-24 minutes, or until the pastry is puffed and golden brown. Rotate the pans halfway through baking for even cooking.
  8. Cool and Serve: Allow the puffs to cool in the tins for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.

These spinach and feta puff pastry bites are sure to be a hit at your next gathering. Enjoy the delightful combination of flaky pastry and savory filling in every bite.
