🥞 Pancake Cereal Stuffed with Cream Cheese + Berries
Mini pancakes, but make them filled. Think crunchy on the outside, gooey cream cheese center, and topped with fresh berries and a maple drizzle.
Ingredients:
- 1 cup pancake mix (or homemade batter)
- 1/2 cup softened cream cheese
- 1 tbsp maple syrup or honey
- 1/2 tsp vanilla extract
- 1/2 cup fresh berries (chopped small: strawberries, blueberries, raspberries)
- Butter or oil for the pan
To Serve:
- Warm maple syrup
- Extra berries
- Powdered sugar (optional)
How to Make It:
1. Make the Filling:
Mix softened cream cheese with maple syrup and vanilla. Stir in a few chopped berries for color and flavor. Chill slightly for easy scooping.
2. Pipe or Scoop the Pancake Cereal:
Heat a nonstick skillet on medium heat. Spoon or pipe small dots of pancake batter—about the size of a nickel.
Right after dropping each one, add a tiny dot of cream cheese filling in the center, then cover with a little more batter to seal.
(Think: pancake dumplings!)
3. Cook Until Golden:
Flip once bubbles form and cook the other side until lightly golden. They’ll puff slightly and hold the filling.
4. Serve Like Cereal:
Scoop your mini stuffed pancakes into a bowl. Top with fresh berries and pour warm maple syrup over the top like “milk.”
Add a dusting of powdered sugar if you’re feeling fancy.
