Ingredients
- 6 oz pasta (any kind—fettuccine, rigatoni, or chickpea/lentil pasta for high-protein)
- 1 cup cottage cheese (full-fat for creaminess)
- 1/3 cup grated Parmesan cheese
- 2 garlic cloves, minced or roasted (your choice!)
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp lemon zest (optional, for brightness)
- 1/4–1/3 cup pasta water (reserved from cooking)
Toppings (optional but great):
- Chopped parsley
- More Parmesan
- Chili flakes or black pepper
- Sautéed mushrooms, spinach, or grilled chicken
Steps
1. Cook the Pasta
Boil pasta in salted water according to package directions. Before draining, reserve about 1/2 cup of pasta water. Drain and set pasta aside.
2. Blend the Alfredo Sauce
In a blender or food processor, combine:
- 1 cup cottage cheese
- Parmesan
- Garlic (raw for bite, or roasted for sweet depth)
- Salt, pepper, and optional lemon zest
- 1/4 cup hot pasta water
Blend until completely smooth—about 30–60 seconds. You want a creamy, velvety texture.
Add more pasta water a little at a time if it’s too thick—it should pour easily.
3. Combine and Heat
Add the drained pasta back into the pot. Pour in your whipped Alfredo sauce and stir gently over low heat for 1–2 minutes until everything is warmed through and the sauce thickens slightly.
4. Serve and Finish
Plate it up! Top with more Parmesan, black pepper, and anything else you like. Don’t skip the parsley—it adds a pop of freshness that balances the richness.
